How to make cookie and pancake cereal: The latest quarantine food trend

There are two new quarantine food trends in town: Pancake cereal and Cookie cereal.

Pancake cereal has been the hottest food trend on TikTok for barely a week, and yet there’s another one on the horizon. Its the new Cookie cereal and it’s ready to take over your social media.

Ever since the lockdown started, almost every person has invested in cooking. These amateur home chefs are not afraid to experiment and learn.

Several food trends have gone viral and that has induced these amateur chefs to try each and every single recipe. In the early days of the lockdown it was Dalgona Coffee, then came Banana Bread, and then Pot rice. Baking has become quite a passion among netizens.

And the latest lockdown trend is cookie and pancake cereal. So, in case you are running out of options of what to eat for breakfast, then this new cereal will be a sweet change for you. All you need is cookies, pancakes and milk. And, if you don’t have the former two, you will have to make them at home or buy the readymade mix.

Here, let’s check out the recipes.

Cookie Cereal INGREDIENTS

1/2 cup coconut oil, 1/4 cup brown sugar, 1 teaspoon vanilla extract, 1 tablespoon ground flax seed, 3 tablespoons water, 1 1/4 cups whole wheat flour, 3/4 cup quick oats, 1/4 teaspoon salt, 1/2 teaspoon baking soda, 1/2 cup mini chocolate chips

  1. Preheat the oven to 400 degrees. Line 2 baking sheets with parchment paper.

  1. In a large mixing bowl, use a hand mixer to beat the coconut oil, brown sugar, and vanilla extract until creamy. Add in the ground flax and water and beat until combined.

  1. Add in the flour, oats, salt, and baking soda. Stir until well combined. Stir in the chocolate chips. The mixture will be almost crumbly, but will hold together when pressed and shaped.

  1. Roll dough into tsp sized balls and place on the prepared baking sheets, leaving a little space in between each piece. They won’t spread much.

  1. Bake in the preheated oven, one baking sheet at a time, until golden brown, 7 to 10 minutes.

  1. Remove from the oven and cool completely on wire racks. Store in an airtight container. Add a few spoonfuls of your mini cookies to a bowl and enjoy with milk. To avoid getting all the cookies soggy at once, only add a few bites to your bowl at a time.

  1. Try it with ice cream as a dessert! (You can add sprinkles on top)

  1. You can make any type of cookie into cookie cereal. Add milk, honey or sugar if you want to make it sweet and garnish it with whatever you like or find in the kitchen (like chocolate chips, fresh fruits)

Pancake Cereal Ingredients

1 cup refined flour/almond flour, 1 teaspoon salt, 1/2 cup milk, 1 tablespoon baking soda, 2 tablespoon sugar, 1 egg, Chocolate spread/syrup, Fruit of your choice – bananas, mangoes, kiwi, etc,

  1. Add all the dry ingredients in a bowl and mix them. Add egg, and beat.
  2. Add a little milk and beat it into the batter. Whisk all the ingredients until the batter comes to the right consistency. The batter should drip, but should also be thick enough to stay at one place when poured on the pan.
  3. Take a piping bag, or squeeze bottle and fill the batter into it.
  4. Now, place a non-stick pan on the stove. Turn the flame to low.
  5. Using the piping bag, pour a little batter on to the pan in a small circular shape. Shift the piping bag and pour the mixture on another spot. Do so until your pan is full.
  6. Once small bubbles start appearing on the top surface of the pancake, it is time to flip them. You may use a tong, or a small spoon to do so.
  7. After flipping, let them cook for a minute or so and then remove them into a clean plate.
  8. Repeat the process with the rest of the batter. Once all the pancakes are ready, put them into a plate, add chopped fruit of choice on top, and drizzle some chocolate syrup or honey on top. You can also add milk and savour.

The best part about any of these mini cereal recipes is how much you can customize them to make them your own. And if you can’t really think of a way to spice up the recipe on your own, you can always turn to social media for inspiration.

From TikTok to Instagram, people have tried out their own versions of the mini cookie/pancake cereal and come up with different ways to make their recipes unique.

Some people have tried simple changes, including, adding chopped strawberries to create a fresh sweetness in the taste. Other people have gotten more creative and added melted Nutella and cookie butter before adding milk. You can do almost anything you want to the recipe. You don’t even have to add milk.
